Taco Stuffed Sweet Potato

It’s Day 15 of the Clean Program, and I am still going strong. Lou made it 5 1/2 days. One of these years we will get him to 7. 😉

The first week both of us were starving. I think it was the combination of cutting out caffeine and sugar that made our bodies so sluggish and tired we just needed straight up calories to get us through the day. Since salads weren’t cutting it for lunch, I decided to make a meal so filling that we could no longer complain.

This Taco Stuffed Sweet Potato is diesel. It’s completely Clean Program approved, meaning there is no gluten, dairy, sugar or processed anything going on in there. Yet, it’s still flavorful and ridiculously filling. For lunch I paired half this sweet potato with a salad, and Lou crushed the whole thing. 

Now that I am on the last week of the program, I no longer need meals this filling for lunch. My appetite is where it should be and my body has adjusted to where I no longer rely on caffeine and sugar to get me through the day. I’ll give you guys a final update on my personal results from the Clean Program next Monday. 🙂

Taco Stuffed Sweet Potato

Taco Stuffed Sweet Potato

Ingredients
  1. 3 sweet potatoes
  2. Extra virgin olive oil
  3. 1/4 onion, minced
  4. 2 cloves of garlic, minced
  5. 1lb of organic ground turkey
  6. 1/2 teaspoon garlic powder
  7. 1/2 teaspoon onion powder
  8. 1/4 teaspoon dried oregano
  9. 1 teaspoon black pepper
  10. 1 1/2 tablespoons of chili powder
  11. 1/2 teaspoon paprika
  12. 1 teaspoon sea salt
  13. 1 1/2 teaspoons cumin
  14. 1/2 cup of water
  15. 1 scallion, sliced
  16. 1 small bunch of fresh cilantro, chopped
  17. Guacamole (avocado, lime juice, garlic, sea salt, pepper)
Instructions
  1. Preheat the oven to 400 degrees F.
  2. Scrub the sweet potatoes with cold water.
  3. Dry and set on a baking sheet lined with tin foil.
  4. Poke some holes on the top of the sweet potato with a fork.
  5. Rub potatoes very lightly with oil, and sprinkle with a dash a sea salt.
  6. Bake for 40 -60 minutes (depending on the size).
  7. While the potatoes are baking, drizzle olive oil into a large pan over medium heat.
  8. Add the onion and garlic and saute for 3-4 minutes.
  9. Add in the ground turkey to the pan and brown.
  10. While the turkey is browning, create the taco seasoning by mixing together the garlic powder, onion, powder, oregano, pepper, chili powder, paprika, sea salt and cumin. Set aside.
  11. When the turkey is browned, pour 1/2 cup of water into the pan and then mix in the taco seasoning.
  12. Slice open the sweet potatoes, fill each with ground turkey, and then top with scallions, cilantro and top with guacamole.
