Thai Peanut Chicken with Brown Rice and Broccolini

I’ve talked about this before, but I hate cooking chicken. Maybe I’ll get over it someday but for now, meh. So I often make a nice deal with Lou where he cooks the chicken and I make the sides, and in the end we have a nice little meal. That, or I’m eating a yogurt and he’s on this own. 😉 

This Thai Peanut Chicken with Brown Rice and Broccolini came out SO good! The peanut sauce is so flavorful and the brown rice makes it super filling. I am still trying to keep a diet that is lower in lectins, so for this type of meal (which is legit all high lectin foods) I will just have a small portion of and pair it with something else. Lou has a stomach made of steel and could legit eat rocks wrapped in cured meats and be fine, so he polished his off no problem.

Thai Peanut Chicken with Brown Rice and Broccolini
Serves 3

Ingredients
  1. 1 cup of brown rice
  2. broccolini/broccoli, chopped
  3. olive oil
  4. sea salt and pepper
  5. 1 tablespoon of fresh grated ginger
  6. 1 tablespoon of minced garlic
  7. 1 tablespoon of soy sauce
  8. 2 heaping tablespoons of natural peanut butter
  9. 1 tablespoon of rice vinegar
  10. 1 tablespoon of honey
  11. 1 tablespoon of sesame oil
  12. 1/2 lime
  13. 4 tablespoons of water
  14. 1 package of organic chicken, cut into cubes
  15. olive oil
  16. garlic salt
  17. pepper
  18. Sriracha
  19. peanuts
Instructions
  1. cook brown rice according to package directions.
  2. preheat the oven to 375 degrees.
  3. Toss the broccolini/broccoli in olive oil, sea salt and pepper and roast for 30 minutes.
  4. add the fresh grated ginger, garlic, soy sauce, peanut butter, rice vinegar, honey, sesame oil, lime juice, and water to a blender or food processor and blend until creamy. Set aside.
  5. Add a drizzle of olive oil to a pan over medium heat.
  6. Add the chicken to the pan and then season with garlic salt, pepper and Sriracha.
  7. Sauté until fully cooked through.
  8. Turn off the heat, pour the sauce over the chicken and mix through.
  9. Add a handful of peanuts to the chicken and mix through.
  10. Add the brown rice to a plate, top with peanut chicken and roasted broccoli on the side.
