Chocolate Chip Banana Nice Cream Sandwiches

The ice cream dilemma; I have it every night. I want it, but I ate healthy all day so I don’t really want to end with all that sugar. Thankfully, there’s recipes like these Chocolate Chip Banana Nice Cream Sandwiches that solve all problems. 🙂

These totally hit the spot when I need it! And since the “ice cream” is frozen bananas and the cookie is made out of oats, nut butter and a little honey, I can enjoy without getting sugar a overload. All you need is a food processor and these guys are super easy to make!

Chocolate Chip Banana Nice Cream Sandwiches
Yields 6
  1. 1/3 cup creamy peanut butter
  2. 1/2 cup unsweetened shredded coconut
  3. 3/4 cup oats (I used quick oats)
  4. 2 tablespoons of honey
  5. 1/2 teaspoon of vanilla
Chocolate Chip Banana “Nice” Cream Ingredients
  1. 2-3 bananas, frozen in 1 inch sized pieces
  2. 1/8 teaspoon of salt
  3. 1/2 teaspoon of vanilla
  4. 1/4 cup chocolate chips (optional)
  1. Remove the frozen bananas from the freezer to slightly thaw.
  2. Line a 12 slot muffin tin with paper liners.
  3. In a food processor, add oats, coconut, peanut butter, honey, and vanilla. Process until well combined (around 30s to 1 min).
  4. Scoop out equal amounts of the “dough” into each of the paper liners, about one heaping spoonful per liner.
  5. Once each liner has the same amount, use a 1/4 measuring cup to press the cookie flat, moving the cup in circles as you press to ensure an even, flat spread.
  6. Place the cookies in the freezer for 5-10min (or longer, to minimize risk of breaking when forming the sandwich).
  7. While the cookies are freezing, use a paper towel to wipe down the food processor to remove any remaining bits of “dough."
  8. Add the slightly thawed bananas, dash of salt, and vanilla and process until creamy (about 3-5mins). Stop processing to push down any chunks of banana if necessary.
  9. Add the chocolate chips to the processor and blend until the chocolate chips have been broken apart into smaller chunks (optional).
  10. Remove the muffin tray from the freezer. Fill half of the liners with the banana nice cream until full. (Enjoy any leftover nice cream as a mid-baking snack!)
  11. Use the remaining half of the cookies to form the top of the nice cream sandwiches. To do so, remove a liner from the muffin tray and peel away the liner from the edges. Carefully turn the cookie upside down onto your fingers, then gently slide it on top of one of the nice cream filled liners. Repeat with the other 5 cookies.
  12. Place the tray in the freezer for 1-2 hours until fully frozen, or overnight. Enjoy! 🙂
