Chocolate Chip Banana Nice Cream Sandwiches

Your girl loves ice cream! I literally could eat it every night, but sometimes I want something that’s sweet without allllll that ice cream sugar! These Chocolate Chip Banana Nice Cream Sandwiches totally hit the spot when I want a healthy frozen treat. Since the “ice cream” is frozen bananas and the cookies are made out of oats, nut butter, and a little honey, I can enjoy them without getting a sugar overload. Perfect for a summer evening 🙂

Ingredients
  1. 1/3 cup of creamy peanut butter
  2. 1/2 cup of unsweetened shredded coconut
  3. 3/4 cup of oats (I used quick oats)
  4. 2 tablespoons of honey
  5. 1/2 teaspoon of vanilla
  6. 2-3 bananas, frozen in 1/2 to 1 inch sized pieces
  7. 1/8 teaspoon of salt
  8. 1/2 teaspoon of vanilla
  9. 1/4 cup of chocolate chips
Instructions
  1. Remove the frozen bananas from the freezer to thaw.
  2. Line a 12 slot muffin tin with paper liners.
  3. In a food processor, add oats, coconut, peanut butter, honey, and vanilla. Process until well combined (around 30 seconds to 1 min).
  4. Scoop out equal amounts of the dough into each of the paper liners, about one heaping spoonful per liner.
  5. use a 1/4 measuring cup to press the cookie flat, moving the cup in circles as you press to ensure an even, flat spread.
  6. Place the cookies in the freezer at least 10 minutes.
  7. While the cookies are freezing, use a paper towel to wipe down the food processor to remove any remaining bits of dough.
  8. Add the slightly thawed bananas, dash of salt, and vanilla and process until creamy (about 3-5 minutes). Stop processing to push down any chunks of banana if necessary.
  9. Add the chocolate chips to the processor and blend until the chocolate chips have been broken apart into smaller chunks (optional).
  10. Remove the muffin tray from the freezer. Fill 6 of the liners with the banana nice cream until full. (Enjoy any leftover nice cream as a mid-baking snack!)
  11. Use the remaining half of the cookies to form the top of the nice cream sandwiches. To do so, remove a liner from the muffin tray and peel away the liner from the edges. Carefully turn the cookie upside down onto your fingers, then gently slide it on top of one of the nice cream filled liners. Repeat with the other 5 cookies.
  12. Place the tray in the freezer for 1-2 hours until fully frozen, or overnight.
