Cinnamon Sugar Cauliflower Gnocchi

Did the dessert gnocchi thang 😉 Ok, so this wasn’t my idea. My friend saw it on Pinterest and texted it to me immediately. I have the biggest sweet tooth ever so I was like done and done. I took my own spin with the recipe, and cooked them the same way I make cinnamon sugar bananas. Then I had leftover hazelnut almond butter (aka healthy Nutella) and drizzled it over the top. Strong move that I totally recommend. Details below!

Ingredients
  1. 1 package of cauliflower gnocchi
  2. 2 spoonfuls of soft coconut oil (I used a regular spoon)
  3. 1 spoonful of coconut sugar
  4. cinnamon
  5. nutella (I used Justin's hazelnut almond butter)
Instructions
  1. remove the cauliflower gnocchi from the package, place on a plate and microwave for 45 seconds.
  2. mix the coconut oil and coconut sugar together in a bowl and add to a non-stick skillet
  3. once hot, add the gnocchi in a single layer and brown (do not move around)
  4. sprinkle cinnamon over the gnocchi while cooking
  5. flip and brown the other side, sprinkling more cinnamon on top
  6. one browned, toss in the remaining coconut oil mixture until coated
  7. drizzle Nutella on top
