Edamame Pesto and Goat Cheese Toast

One of the main things you guys ask for are more healthy snacks! And I get it, I love snacks. 🙂 I’m a grazer by nature, and although I try to do better with eating more solid meals I really prefer “snacking” or eating smaller meals more frequently. So my snacks need to be nutritious and more like “mini meals,” not just like a handful of crackers (which I love). This baby I have in me is also literally taking up all the space in my body haha, or at least it feels that way! So if I eat a big meal I feel all sorts of pressure, on top of the fact that’s he’s often kicking me in the ribs. 🙂 

So I’m on the healthy snack hunt with you guys, and I’ve been making a lot of loaded toasts! This Edamame Pesto and Goat Cheese Toast is full of protein and veggies, and super easy to whip up. The pesto is homemade, but you just throw things into a food processor and boom it’s done. It makes a good size batch that I just save in the fridge and use it for toast, a dip or mixed into pasta!

Ingredients
  1. 1 cup of shelled edamame (defrost if frozen)
  2. 2 teaspoons of minced garlic
  3. 2 cups of shredded basil leaves
  4. 1/4 cup of olive oil
  5. juice from 1/2 lemon
  6. 1/2 teaspoon of sea salt
  7. few dashes of pepper
  8. slice of bread (I love Food for Life brand)
  9. sliced cucumber
  10. halved cherry tomatoes
  11. goat cheese
Instructions
  1. add the edamame, garlic, basil leaves, olive oil, lemon juice, sea salt and pepper to a food processor and process until fairly smooth (it won't get perfectly smooth)
  2. toast bread
  3. spread edamame pesto over the toast
  4. top with sliced cucumber, halved cherry tomatoes, goat cheese, a few shelled edamame pieces and a sprinkle of sea salt and pepper
Notes
  1. You will have lots of leftover pesto for pasta, toast or dipping!
