Greek Stuffed Sweet Potato

I love stuffing a baked sweet potato and turning it into a meal! Our Taco Stuffed Sweet Potato is one of my favorites; and according to Instagram one of your faves too! Then we’ve got a Scrambled Egg Stuffed Sweet Potato and Festive Stuffed Sweet Potatoes also on the blog. Sometimes I even stuff them with yogurt, granola and berries for breakfast, So you know, just in case you needed one more option; I went Greek. 🙂

This recipe is fairly quick and easy! Besides waiting patiently for the sweet potato to bake, the prep work is pretty minimal. I buy pre-made tzatziki to make my life easier, however there are tons of great recipes with greek yogurt to make it yourself! If you’re in need of more protein, mix in some chicken sausage or pair with grilled chicken on the side.

Serves 3
  1. 3 sweet potatoes
  2. 1 cup of dry quinoa
  3. 2 cups of water
  4. sea salt
  5. 1/2 red onion, chopped
  6. 1/2 lemon
  7. a few sprigs of fresh dill, minced
  8. kalamata olives
  9. tzatziki (I used Trader Joe's brand)
  1. preheat the oven to 400 F
  2. pierce the sweet potatoes with a fork multiple times, and then place on a baking sheet lined with parchment paper
  3. bake for 45 minutes
  4. add the one cup of quinoa, two cups of water and a few generous dashes of sea salt to a pot
  5. bring to a boil and then cover, reduce heat to medium low, and simmer until water is absorbed (15 to 20 minutes)
  6. remove from heat for 5 minutes; uncover and fluff with a fork.
  7. add the onion, dill, olives and juice from 1/2 lemon to the quinoa and mix through
  8. once the sweet potatoes are finished cooking, allow to cool and then slice each down the middle and smash the inside with a fork
  9. scoop the quinoa mixture into each sweet potato
  10. top with a spoonful of tzatziki
  1. make a single serving with one sweet potato, and store the extra quinoa mixture in the fridge for leftovers
