Healthy Berry Baked Oatmeal l for Easter! Or any other day of the year. 🙂 Whether you are hosting everyone or want to bring something along, this oatmeal bake is not only super easy but can be made the night before! When it’s almost time to eat, cover it with foil and bake at 350F for 20 minutes. Not to mention, it’s also pretty. 😉

Ingredients
  1. 2 cups of rolled oats
  2. 1 teaspoon of cinnamon
  3. 1 teaspoon of baking powder
  4. dash of sea salt
  5. 2 large ripe bananas (1 cup mashed)
  6. 3/4 of nut milk
  7. 1 tablespoon of maple syrup
  8. 1 egg
  9. 1 teaspoon of vanilla
  10. 1 cup of mixed blueberries and strawberries
Instructions
  1. preheat the oven to 350F
  2. mix the dry ingredients together
  3. in a separate bowl mix the wet ingredients together (except for the berries)
  4. pour the wet ingredients into the dry and mix together until combined
  5. fold in the berries
  6. pour into a greased or lined square baking pan and top with additional berries if desired.
  7. bake for 35 minutes and then allow to cool for 10 minutes before slicing.
Notes
  1. make this ahead of time and then to reheat cover with foil and bake at 350 for 20 min!
