First Taco Tuesday of the new year!

I was off from work last week and must have made these Healthy Kale and Avocado Breakfast Tacos at least three times for either breakfast, lunch or dinner. What I love is that they are packed with protein, greens and healthy fats so they fill you up with all the good stuff. 🙂 

2018 is going to be all about the balance! My goal for making meals is to concentrate more on sticking to real foods, and being less concerned about carbs or calories. If we stick to whole foods as often as possible, get moving every day, and reduce as much stress as possible in our lives, we will be healthy. 🙂

Healthy Kale and Avocado Breakfast Tacos
Serves 1
  1. 2 tortillas
  2. 2 eggs
  3. 1 avocado
  4. sea salt and pepper
  5. garlic powder
  6. 1/2 lime
  7. kale
  8. olive oil
  9. salsa
  1. place the two tortillas in the oven and broil on low until warm and slightly crisped
  2. mash the avocado with a dash of sea salt, pepper, garlic powder and juice of 1/2 lime and set aside
  3. add a drizzle of oil to a pan over medium heat
  4. add the kale with a dash of sea salt and sauté until wilted and crispy
  5. remove the tortillas and spread the avocado onto each
  6. top with sautéed kale
  7. whisk the two eggs together in a bowl, add a bit more oil/butter to the pan and scramble the two eggs with a dash of sea salt and pepper until cooked through
  8. divide and add to each tortilla
  9. top with a dollop of salsa
