Healthy Shrimp Tacos with Avocado Creama

Taco Tuesday! So I got my act together enough the other night to cook these Healthy Shrimp Tacos with Avocado Creama while Lou occupied Luca. As I’ve mentioned before, the meals on this blog are all quick and easy. But with the baby quick and easy needs to be like; real quick. 

Making your own avocado creama might seem like too much effort (I almost didn’t do it), but it’s legit throwing like three things into a food processor and turning it on. I LOVE shrimp tacos. I could eat them all the time, so I’m happy I finally worked on a recipe that I love. The best part is these are SO healthy! Protein, good fats and veggies. Recipe below!

  1. 1 ripe avocado
  2. 1 lime, juice
  3. 1 teaspoon of cumin
  4. 1/4 cup of plain 2% greek yogurt
  5. sea salt and pepper
  6. 1 lb shrimp, peeled and deveined
  7. sea salt and pepper
  8. dash of cayenne pepper
  9. olive oil
  10. 1 heaping tablespoon of minced garlic
  11. 2 tablespoons of chopped cilantro
  12. 1/2 lime, juice
  13. tortillas
  14. shredded cabbage
  1. in a food processor add the avocado, lime juice, cumin, greek yogurt, sea salt and pepper and process until smooth
  2. season shrimp with sea salt, pepper and a dash of cayenne
  3. in a large skillet add a generous drizzle of olive oil over medium heat
  4. add garlic and sauté until fragrant
  5. add the shrimp and cook half way, then flip shrimp and add the juice from 1/2 lime and chopped cilantro.
  6. saute until fully cooked.
  7. assemble tacos by warming your tortillas, then layer shredded cabbage, shrimp and avocado crema
  8. top with a sprinkle of fresh cilantro
