Super easy appetizer or dinner idea! I could literally eat sweet potato every day and not get sick of it. I usually just chop it up and add it to a melody of roasted veggies as a side for dinner, but this time I figured why not just throw a bunch of stuff on top and make it it’s own meal. 😉

This Loaded Sweet Potato Fries recipe is super versatile! I added what I happened to have in the fridge that day and loved the combo; but pick what toppings you like! This would also be great with grilled chicken or ground turkey for added protein.

Ingredients
  1. 3 sweet potatoes
  2. olive oil
  3. sea salt
  4. pepper
  5. garlic powder
  6. organic corn
  7. black beans
  8. cherry tomatoes, halved
  9. shredded sharp cheddar
  10. avocado, diced
  11. cilantro, minced
Instructions
  1. preheat the oven to 400 degrees F
  2. slice the sweet potatoes into fries
  3. drizzle with olive oil and season with sea salt, pepper, and garlic powder
  4. bake for 35 minutes, or until crispy, tossing halfway
  5. in a serving dish layer the sweet potato fries, corn, black beans and cherry tomatoes
  6. top with cheddar cheese
  7. broil on high until the cheese is melted
  8. top with avocado and cilantro
