One Pot Creamy Sun-Dried Tomato Basil Pasta

I am so excited about this recipe! This One Pot Creamy Sun-Dried Tomato Basil Pasta is SO easy and SO good. And by one pot I mean, only one pot. The sauce is made and then the pasta is cooked right in there until creamy and ready to serve! Easy clean up. 🙂

Not only is this recipe quick and delicious, it’s gluten free, vegan and super healthy! I used Banza chickpea pasta that’s loaded with protein and fiber. The sauce is low in calories, and the end result ends up super creamy without needing any cheese or cream.

One Pot Creamy Sun-Dried Tomato Basil Pasta

One Pot Creamy Sun-Dried Tomato Basil Pasta

Ingredients
  1. olive oil
  2. 1/2 of cup diced onion
  3. 3 garlic cloves, minced
  4. 1 tablespoon of capers
  5. 1/3 cup of sun-dried tomatoes in oil, drained and diced
  6. 1 1/2 cups of vegetable broth
  7. 1 cup Arrabbiata sauce
  8. 1 15oz can of diced tomatoes in liquid
  9. 1 teaspoon of sugar
  10. 1 8oz box of gluten free pasta (I used Banza)
  11. 1 large handful of basil, roughly chopped
  12. chopped parsley for garnish
Instructions
  1. add a drizzle of olive oil to a medium pot over medium heat
  2. add the onion and sauté until translucent
  3. add the garlic and sauté for 1 minute
  4. add the capers, diced sun-dried tomatoes, vegetable broth, arrabbiata sauce, can of diced tomatoes and sugar. Mix through and bring to a boil
  5. add the pasta and mix until all of the pasta is just submerged
  6. cook for the minimum time it says on the box, stirring frequently
  7. when the pasta is done cooking most of the liquid should be reduced
  8. remove from heat and stir in the chopped basil
  9. top with chopped parsley
Notes
  1. make sure if you use a bigger box of pasta you add more liquid!
