S’mores Cereal Bars

I live for a campfire, glass of red wine and s’mores! Lou and I say when we have a house someday a backyard with a fire pit is a must. There is just something about this combo that warms my soul. I took a spin on the classic and made a “cooler” version for summer. I crunchy cereal bar layer, mallows, and dark chocolate. 🙂

These are freezer S’mores Cereal Bars! I eat them cold and they are the perfect dessert for a non-campfire, I’m actually sitting on my couch, dessert. 🙂

Ingredients
  1. 3 cups of Barbara's Bakery Multigrain Spoonfuls (or other similar cereal)
  2. 1/2 cup of cashew butter
  3. 1/4 cup of honey
  4. 1/4 cup of grass-fed butter
  5. 3 cups of marshmallows
  6. 1 cup of dark chocolate chips
  7. 2 teaspoons of coconut oil
Instructions
  1. add the cereal to a large bowl
  2. in a small sauce pot, add the cashew butter, honey and butter and stir over low heat until combined.
  3. pour over the cereal and mix until evenly coated
  4. press into a 9x9 square pan that has been lightly greased and lined with parchment paper. make sure it's pressed evenly.
  5. place in the freezer.
  6. add the marshmallows to a microwave save bowl and heat in 30 second intervals until you can mix it with a spoon.
  7. spread the marshmallow over the cereal layer until even.
  8. place in the freezer.
  9. in another bowl, add the chocolate chips and coconut oil and heat in the microwave until melted.
  10. stir and then pour over the marshmallow layer and spread out evenly.
  11. place in the freezer until the chocolate is set.
  12. cut into bars and enjoy!
  13. store in the freezer!
