Garlic and Herb Baked Sweet Potato Fries

Garlic and Herb Baked Sweet Potato Fries

At least twice a week I make some form of chicken or protein, and two vegetables for dinner. It’s easy, healthy, filling and doesn’t require much thought; because when I get home from a long day of work I prefer not to think too hard. 🙂

Lou and I have been OBSESSED with making these Garlic and Herb Baked Sweet Potato Fries. I love sweet potatoes as is with a little sea salt and pepper; but you throw some fresh garlic, parsley and Parmigiano-Reggiano on there and hello

These are also a great crowd pleasing option if you are having people over for brunch or dinner. I eat sweet potato with my eggs, not sure about you. 😉 Just double or triple the recipe!
