Garlic and Herb Baked Sweet Potato Fries
At least twice a week I make some form of chicken or protein, and two vegetables for dinner. It’s easy, healthy, filling and doesn’t require much thought; because when I get home from a long day of work I prefer not to think too hard. 🙂
Lou and I have been OBSESSED with making these Garlic and Herb Baked Sweet Potato Fries. I love sweet potatoes as is with a little sea salt and pepper; but you throw some fresh garlic, parsley and Parmigiano-Reggiano on there and hello!
These are also a great crowd pleasing option if you are having people over for brunch or dinner. I eat sweet potato with my eggs, not sure about you. 😉 Just double or triple the recipe!
Garlic and Herb Baked Sweet Potato Fries

Ingredients
- 2 medium/large sweet potatoes skin on, washed and dried
- olive oil
- sea salt and pepper
- 2 tablespoons of chopped flat leaf parsley
- 2 cloves of garlic, minced
- 1 tablespoon of grated Parmigiano-Reggiano cheese
Instructions
- preheat the oven to 450 degrees F
- Slice the sweet potatoes into wedges or fries
- toss with olive oil, sea salt and pepper and spread evenly on a baking sheet lined with parchment paper
- bake for 22-24 minutes, tossing halfway in between
- while the sweet potato is baking, add the parsley, garlic and Parmigiano-Reggiano cheese to a bowl and mix together
- remove from the oven and add the sweet potatoes fries to a large bowl or serving dish
- add the parsley mixture to the hot fries and gently mix through until coated
- serve warm
