Healthy Broccoli Cheddar Bites
Luca has 8 consistent words. Mama, Dada, Moo, Baa, No, Neigh, That and Cheese. Glad “cheese” made the top 10. 😉
So I am alwayssss looking for new things to make for him. Like always. Even for me, a food blogger who literally makes new things all the time, I find I get stuck giving him the same staples! He loves broccoli. Will shovel steamed broccoli in like it’s cookies. So I don’t necessarily need to “hide” it in other foods (yet), but I do want to make sure he is getting new variations all the time. And like his mama; the kid loves cheese. 🙂
Don’t be fooled that these Healthy Broccoli Cheddar Bites are geared for kids, because they are so good I couldn’t stop eating them myself! Perfect balance broccoli and organic cheddar.
- 2 cups of steamed broccoli florets
- 2 eggs
- 1/2 cup almond flour
- 3/4 cup of organic shredded cheddar cheese
- 1/2 teaspoon of oregano
- 1/2 teaspoon of garlic powder
- 1/4 teaspoon of pepper
- pinch of sea salt
- preheat the oven to 400F
- chop the steamed broccoli florets finely
- in a large bowl add all of the ingredients and mix until well combined
- line a baking sheet with parchment paper and spray lightly with oil
- using a cookie scoop or tablespoon, scoop the batter, roll into balls and place on the baking sheet (I pat them down a little)
- lightly spray the broccoli cheddar bite batter with oil and bake for 20-25 minutes until lightly brown
- you can also cook these in a pan with a light layer of oil, flipping halfway to brown each side.
