Turkey, Broccoli and Cheddar Biscuits

The hardest part about Luca transiting to eating mostly solids (and not purees) is I ALWAYS need to be prepared. Like, he can’t just have chips and hummus with me when Lou works late. 😉 I need to have veggies, fruit and protein prepped so he is getting all those good nutrients in and also not eating the same things all the time. I am always looking for recipes that I can make in the beginning of the week, and he can eat off of for at least few days! 

I’m all about the veggie-loaded burger, meatball, biscuit vibe. These Turkey, Broccoli and Cheddar Biscuits are SO good! I know I made these for him in mind, but I totally eat them too. 🙂

Turkey, Broccoli and Cheddar Biscuits

Ingredients
  1. 8oz of organic ground turkey (1/2 package)
  2. 1/3 yellow onion, diced
  3. 1/2 cup of finely diced broccoli florets
  4. olive oil
  5. 3 eggs
  6. 3/4 cup of organic shredded cheese
  7. 3/4 cup of almond flour
  8. 1 teaspoon of baking powder
  9. 1/4 teaspoon garlic powder
  10. a few dashes of sea salt and pepper*
Instructions
  1. preheat the oven to 375F
  2. brown the turkey in a medium pan, when finished set aside
  3. in the same pan add the onions and broccoli with a splash of olive oil and sauté until tender
  4. in a medium mixing bowl, whisk the 3 eggs together
  5. add 1/2 cup of cheddar cheese and combine (save the other 1/4 cup)
  6. in a separate bowl combine the almond flour, baking powder, garlic powder, salt and pepper
  7. pour the egg mixture in along with the ground turkey, broccoli and onions and mix until well combined.
  8. use an ice cream scoop to scoop the batter onto a baking sheet lined with parchment paper.
  9. press down slightly with your hand to flatten a little and ensure it's a biscuit shape.
  10. top with the remaining shredded cheddar and bake for 12 minutes.
Notes
  1. *you can omit salt or only add a very small amount if giving to a baby
