GUYS. This Gluten Free Peanut Butter Banana Bread is SO GOOD. I’m sorry I’m yelling, but it’s just delicious. So easy, and you only need one bowl. It has the perfect amount of peanut butter flavor. And if you want more, just drizzle it on top. 🙂

I have been trying to get back into taking more time with my food photos. Not that I didn’t take time before, but I started getting away from staging and instead was taking very simple clean shots, more for the purpose of IG. However, one of the reasons we started this blog in the first place was because Lou got me a really nice camera and I needed something to take pictures of haha. We had started the Clean Program at the same time and were desperate for recipes (this was “back in the day” when like paleo wasn’t a thing) and decided to start photographing our creations. It’s something that I actually really enjoy when I don’t let the stress/pressure get to me. I am going to be investing in a new set-up (apartment life is a challenge haha) as well as staging props and really start to play around more.

Ingredients
  1. 2 bananas
  2. 2 eggs
  3. 1 teaspoon of vanilla
  4. 1/3 cup of natural peanut butter
  5. 3 tablespoons of applesauce
  6. 1 teaspoon of baking powder
  7. ½ teaspoon of baking soda
  8. 1 cup gluten free all purpose flour (I used Jessica's)
  9. ½ cup almond flour
  10. ¼ teaspoon salt
  11. ½ cup of sugar
Instructions
  1. Preheat the oven to 350*.
  2. Mash the bananas in a large bowl.
  3. Mix in the eggs and whisk until frothy.
  4. Mix in the peanut butter, vanilla, and applesauce.
  5. Add the baking soda, baking powder, gluten free flour, almond flour, sugar, and salt. Mix until just combined.
  6. Pour the batter into a greased bread pan.
  7. Bake at 350* for 45 minutes.
  8. Remove from the oven and let cool for at least 10min before slicing.
Notes
  1. Different gluten free flours may change texture a bit!
