Zucchini Protein Smoothie
My favorite way to start the day is to whip up a nice and thick smoothie. Preferably a green smoothie, because you know, spinach 4 breakfast 😉. It’s like waking up and making your bed first thing in the morning. You know you’re automatically off to a productive start! For me, a green smoothie in the morning helps to get me in the mindset of wanting to stick to more healthful choices for the rest of the day. Or, if that doesn’t end up happening because balance is okay too, at least I got a ton of nutrients in at breakfast!
Adding frozen fruit and vegetables is one of my favorite tips to give for how to make thick and creamy smoothies. If you follow us on Instagram, you may have noticed that I’m all about adding frozen zucchini to my smoothies lately. Not only does it help me to get extra veggies in there, but it is also a low sugar way to make my shake the perfect concistency. And this Zucchini Protein Smoothie is just that, thick and creamy! I quickly steam the zucchini first so it’s easier to digest, and then freeze for later use.
- 10oz unsweetened nut milk
- 1/2 frozen banana
- 2 big handfuls of spinach or kale
- 1 handful of chopped frozen zucchini
- 1 scoop chocolate or vanilla plant-based protein
- Add everything into a blender and blend until smooth and creamy.
- Add more zucchini as needed for a thicker shake.
